1 1/2 tbsp oil
3 tbsp chopped garlic
2 tbsp finely sliced shallots
2 tsp cumin seeds
1 tsp shrimp paste
1 1/2 tbsp thai red curry paste
14 oz coconut milk
1 tbsp fish sauce
2 tsp sugar
small handful shredded basil
4 kaffir lime leaves or tbsp shredded lime zest
1 lb raw prawns,shelled and devoined
a handful f fresh coriander leaves
heat the wok until very hotadd the garlic, shallots and cumin seeds and stir fry fr 5 minutes or until well toasted.then add the shrimp paste and curry paste and stir fry for 2 minutes
now add the coconut milk, fish sauce,sugar, basil and lime or zest. reduce the heat and simmer for 5 minutes.
add the prawns and cook for 5 minutes,stirring from time to time.add the coriander leaves and give the mixture a good stir.
